Today I want to share some absolutely amazing almond pumpkin bars that you’re sure to love!
Now, before I give you the recipe, I want to give you one caveat.
These almond pumpkin bars taste amazing – BUT – they are not low calorie!
I got this recipe from a friend of mine who is working through a program called The Next 56 Days that is taking North Carolina by storm! The program claims to “Release fat, balance blood sugar, detox, & lessen inflammation.”
These bars are just one of their delicious snacks that fit within the eating plan they teach participants how to follow.
Now – I’m pretty sure Truvia is not on the plan, but it’s the sweetener I had available.
Make them for yourself, but remember – don’t eat as many as you want!!! Especially if you’re trying to watch your calories.
Well, here you go – they call them…
Carrie’s Care Bars
- 1 Cup coconut oil
- 1 Cup PB2
- 15 packets Truvia
- 2 tsp cinnamon
- 1/2 tsp sea salt
- 2 Cups unsalted almonds
- 1 Cup raw pumpkin seeds
- 1/2 Cup oatmeal
- Melt the coconut oil.
- Mix all the ingredients together is a large mixing bowl until well mixed.
- Pour contents into a mini muffin pan. I was able to get 30 servings, but my mini pan only had 24 slots – so make sure you have enough slots for them.
- Put them in the freezer until they set up. Mine only took ~ 1 hour.
Keep them stored in the fridge!
If you’ve made more than you plan to eat for the week, store the rest of them in the freezer until you’re ready to enjoy them!
- Calories: 149
- Fat: 13g
- Carbs: 6.2g
- Protein: 4.6 g
- Fiber: 2g
Now – remember again – I never said these were low calorie or low fat. But, they are made of whole, natural, great ingredients. They also taste pretty amazing, and they are quite filling as well.
Just be careful, because you’ll want way more than 1!
