IMG_2130So this dish has a few more calories than the dishes I’ve posted on here previously, but it is still crazy good! And, you can always control the caloric content of your entire meal by what sides you choose. I chose sauteed spinach (~100 calories per serving because of the EVOL) and grilled squash and zucchini ( One large veggie has about 55 calories without oil). I can eat a whole lot of that for not a lot of calories.

Ingredients:

4 boneless, skinless chicken breasts (4 oz each)
1/4 C parsley
1 Tbsp rosemary
1 Tbsp thyme
1/2 tsp sea salt (I often use more)
Fresh ground black pepper to taste
1/2 Tbsp sage
1/4 C crushed cashews
1 Tbsp Dijon mustard

Directions:

Place each chicken breast in a large Ziploc bag and pound with a meat tenderizing hammer until flattened slightly (down to ~ 1/2 inch thickness).
Mix the herbs, salt, pepper, and cashews in a bowl and then transfer the mixture to a flat plate.
Brush each chicken breast with Dijon mustard and coat with the herb mixture.
Heat ~ 1/2 Tbps EVOL in a pan over medium heat. Saute the chicken with the rounded side down for 3-5 minutes.
Reduce the heat, turn the breasts over, and cook 3-5 more minutes or until the chicken is cooked through.

Serve with your favorite sides!
