Zucchini and Squash – What to Do With All of It?

Over the past several months, roasted vegetables have become just about my favorite thing. 

I’ve been roasting just about everything, from fresh Brussels sprouts and asparagus to even using a frozen broccoli, cauliflower, and carrot blend. The fresh veggies always taste just a little bit better, but the frozen ones work almost just as well.

You HAVE to try out this Tasty Black Bean and Quinoa Salad Recipe!

When you read the recipe, your first thought might not be, “Man! I gotta have me some of that!” but after you try it…Whooaa, Buddy!

Quinoa is a great “replacement” for grains such as rice because it has a similar texture but is also a complete protein. A 1/2 cup serving (which is a good bit) only has 126 calories with 4 grams of fiber and almost 5 grams of protein.

Roasted Red Potatoes

potatoesinbowlI LOVE these potatoes! They make a really great side to add to just about anything, AND they’re super easy to make! I usually make about 4 servings and keep the leftovers in the fridge for later. They reheat pretty well, so it works out great for lunches later in the week!

Ingredients:

~4-5 medium red potatoes (I used about 24 oz total)

Easiest Recipe Ever – Spaghetti Squash

squash1This is by far the easiest recipe I have posted to this point, and could possibly be the easiest one I ever do post. Last week was the first time I ever cooked spaghetti squash.
