Over the past several months, roasted vegetables have become just about my favorite thing.
I’ve been roasting just about everything, from fresh Brussels sprouts and asparagus to even using a frozen broccoli, cauliflower, and carrot blend. The fresh veggies always taste just a little bit better, but the frozen ones work almost just as well.
This week I tried something new – Zucchini and Squash!
I know what you’re thinking – “Brussels sprouts you’ll actually want more of! There ain’t no such thing!”

I love this stuff!
You HAVE to try out this Tasty Black Bean and Quinoa Salad Recipe!

Hope you like them!

I guess I always figured it would be too hard, so I just never tried. Well, I’m glad I did. I love this stuff! The first time I made it, I served it with my homemade marinara sauce and turkey meatballs – (more…)
