I found that I had to cook it probably about twice as long as the directions say because I used a smaller pan, more broccoli and cauliflower and probably more tomatoes, so it was pretty thick and chock full of good stuff. Just keep an eye on it and don’t let it burn.


2 cups of cauliflower and broccoli – steamed and chopped (I used frozen steamer bags)
6 large egg white (or 1.75 Cups of egg white from carton)
1/2 small tomato (I used 2 Roma tomatoes – oops)
Pinch of salt and pepper to taste
1.5 Tbsp Parmesan cheese


Preheat oven to 425 degrees. Spray medium oven-safe non-stick skillet with cooking spray.
Pour egg whites into skilled and place veggies, tomato slices, salt, pepper, and Parmesan cheese over the egg whites
Drizzled ketchup over the top for a “pizza sauce”
Place skillet in the oven and bake for 20-25 minutes or until the top is golden brown and egg whites are firm to touch.
Remove from oven and slice onto plate
