potatoesinbowlI LOVE these potatoes! They make a really great side to add to just about anything, AND they’re super easy to make! I usually make about 4 servings and keep the leftovers in the fridge for later. They reheat pretty well, so it works out great for lunches later in the week!

Ingredients:

~4-5 medium red potatoes (I used about 24 oz total)
1 Tbsp EVOL
2 tsp garlic powder
1 tsp onion powder
1 tsp rosemary
1 tsp thyme
salt and pepper to taste

Directions:

Move your oven rack to the lowest rung. Preheat the oven to 450 degrees. Spray/grease a baking pan.

choppedpotatoesChop the potatoes into wedges – I usually get 6-12 per potato – and place into a mixing bowl. Add the oil, garlic, onion powder, rosemary, thyme, salt and pepper, and stir well until the potatoes are evenly coated.

Place the wedges on the baking pan with as much of the red peeling facing up as possible.
