This Super Delicious Black Bean Soup Recipe is sneaky. It’s chock full of veggies, but you’d never know. It’s an awesome sort of “southwestern” style soup that goes great with some corn chips or cheese quesadillas.
Plus, the fiber in the black beans will help fill you up fast and keep you feeling full.
This recipe takes a little bit of work with all the chopping and such, but it’s well worth it, and it makes a good bit of soup.
You could also make double or triple the amount and freeze a little for later.

1 tsp butter
1 red onion, chopped
2 garlic cloves, minced
2 celery ribs, chopped
6 baby carrots, chopped
1/4 large red bell pepper chopped
1.5 Cups water
2 (15 oz) cans black beans, rinsed and drained
Salt and black pepper to taste
1 tsp cumin
Juice of 1/2 lemon
In a medium-large stock pop over medium heat, cooked the onion, garlic, celery, carrots, and bell pepper in the butter until tender – about 10 minutes.
Transfer the cooked veggies to a blender (I used my Nutri Ninja Pro, which I LOVE). Add the water and 1/2 can of black beans. Process until it becomes a smooth puree.
Return the puree to the stock pot. Add the rest of the beans, cumin, salt, pepper, and lemon juice. Cook until nice and warm! If you like thinner soup, add more water.
