It’s that time of year…PUMPKIN EVERYTHING!

Pumpkin bread, pumpkin waffles, pumpkin spice Cliff Bars, pumpkin spice latte, pumpkin pie yogurt, pumpkin spice Hershey Kisses (What?), and even pumpkin Oreos (C’mon now! That’s just wrong!).

(Just an aside, the more times I typed the word pumpkin, the less it sounded like a real word.)

So, in honor of the “Eat Everything Pumpkin Until You Can’t Stand It Anymore” season, I want to share an amazing recipe from a wonderful lady whose recipes I have tried many times.

I reviewed Katie Farrell of dashingdish.com ‘s book Devotions for a Healthier You that you can read HERE, and even shared her Egg White Pizza Recipe.

So now without further ado…

These pumpkin spice protein pancakes will blow you mind!


  • 1 scoop Protein powder
  • 1/2 cup Pumpkin (not pumpkin pie filling)
  • 1/2 tsp Cinnamon (or 1/4 tsp pumpkin spice + 1/4 tsp cinnamon)
  • 1/2 tsp Baking powder
  • Egg whites
  • 1/2 cup Oats
  • 1/2 cup+ 2 tbs water
  • 3-5 pkts Stevia (or 1/2-1 tbs sweetener of choice)


  • The estimated total time to make this recipe is 15 Minutes.
  •  Put all of the ingredients in a blender and blend until smooth!
  •  Meanwhile, heat a nonstick griddle (or large nonstick skillet) coated with cooking spray over medium heat. Spoon about 1/4 cup of batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles and edges look cooked. Serve warm!
